His culinary journey spans over thirty decades, during which he garnered awards from renowned culinary and environmental organizations.

As a member of the American Natural Foods team, Chef Mark’s culinary excellence earned his team two gold medals, a silver, and a bronze at the Culinary Olympics in Germany. A standout achievement was his gold medal win for the USA, marking a defining moment in his career within the vegetarian and vegan movement.

In June 2018, Chef Mark received a prestigious invitation to the White House by First Lady Michelle Obama for his involvement in the “Chefs Move to Schools” initiative, where he actively engages with schools to promote healthier food choices for children. His vision is to use interactive and thought-provoking methods to educate individuals of all ages about the significance of healthy foods and organic farming.

Chef Mark was recognized with the “Chef Hero Award” for his exceptional contributions as a chef and restaurateur. He continues to collaborate with public school systems and various charitable organizations to spread his message of sustainability and the importance of a plant-based lifestyle.

Throughout his career, Chef Mark has had the honor of serving his conscious cuisine to numerous celebrities, including rock legend Neil Young & Crazy Horse, Billy Joel, Chrissie Hynde, Danny DeVito, Moby, Kevin Costner, and LA’s Chef Tal Ronnen, to name a few.

For over 22 years, Chef Mark was the executive chef and co-owner of “It’s Only Natural Restaurant” in Middletown, CT. Under his guidance, ION transformed into a multi-award-winning restaurant, gaining recognition not only for its culinary excellence but also for his outstanding humanitarian efforts.

In August 2011, Chef Mark embarked on a new chapter, selling his share of “It’s Only Natural” to pursue various projects, including the successful G Monkey Mobile. He then assumed the role of executive chef at the award-winning G-Zen Restaurant in Branford, CT, which became one of the top vegan restaurants globally. G-Zen earned accolades such as being named one of the “Top 5 Vegan Restaurants in the USA” by Travel + Leisure, “Top 10 Vegan Restaurants in the World” by Happy Cow, and “Top 10 Vegan Restaurants in the USA” by Vegnews.

In 2022, G-Zen in Branford closed its doors after 13 years to fulfill the dream of turning the G Monkey Truck into a full brick-and-mortar establishment, G Monkey Plant-Fueled Fast Food, with a flagship location in West Hartford. G Monkey was named the “Top Vegan Restaurant in CT” by CT magazine and received numerous accolades and awards during its brief time in operation.

Looking ahead to November 2023, Chef Mark Shadle and his business partner and wife, Ami Beach, are refocusing their energy on expanding the G Monkey Mobile truck and creating intimate, creative culinary experiences. With 35 years of culinary expertise and ownership of three top-rated plant-based restaurants, Chef Mark is also expanding into restaurant consulting and offering vegan lifestyle retreats at their home in Culebra, Puerto Rico.
